Saturday Morning Breakfast

We love to eat together as a family. Almost every evening of the week we enjoy sitting down together around our kitchen table, even if it's a quick 20 minutes together - as my hubby has got to race off to work.

So Saturday morning rolls around and we get to sleep in (if the kids allow), spend time outside with the chickens and ducks, make a late breakfast and just take our time.

Here's our Saturday morning breakfast tradition... it may change over the years but for now it's everyone's favorite! My sweet momma gave me this recipe - she is a wonderful cook!


Crepes

Ingredients:
1 1/2 cups milk
2 eggs
1 Tb oil
1 Tb vanilla
1 cup flour
1/4 tsp salt

Directions:
Mix all of the ingredients together well with a whisk. Heat a small pan on medium heat.
Spray pan with oil, or use butter - before cooking each crepe.
When pan is hot, pour a small amount (1/4 cup) of batter into pan and swirl pan around to cover the bottom evenly with batter. Let cook for a couple minutes, turn over and let cook even less time on side #2.

The key to crepes is to make them thin and delicate. Not thick and tough like a pancake.
May take a little practice but they turn out SO tasty!

My hubby and the kids like their with butter and syrup. I prefer mixing together cream cheese and strawberry jam to go on mine! Can't have too much of a good thing, right?  :o)

I made these yesterday for breakfast and Matt & I loved them!! We mixed the cream cheese and Strawberry preserves together and it's so tasty. We even saved the left over batter and had more this morning. Thanks for sharing!!
