Overnight (or not) Cinnamon Rolls
Ingredients:
1 cup milk
1/3 cup butter
1 package active dry yeast
1/2 cup white sugar
4 1/2 cups all-purpose flour
1 teaspoon salt
3 eggs
Filling:
3 tablespoons melted butter
3/4 cup brown sugar
1 tablespoon ground cinnamon
Frosting:
4 ounces cream cheese, softened
1/4 cup butter, softened
1 1/2 cups powdered sugar
1 1/2 teaspoons milk or half n’ half
1/2 teaspoon vanilla
Tip: Add more milk or powdered sugar to change the consistency of the frosting.
Cream cheese frosting! I could lick the bowl :o)
Directions:
1. Heat the milk in microwave safe bowl for 1.5 min on High in micro. Add the butter and stir until melted; let cool until lukewarm.
2. In a large mixing bowl, dissolve the yeast in the milk mixture. Add the sugar, 3 cups of flour, salt and eggs; stir well to combine.Add the remaining flour, 1/2 cup at a time, stirring well after each addition.
3. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes.
4. Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
5. Deflate the dough and turn it out onto a lightly floured surface and roll into a 10x 14 inch rectangle. Lightly brush the entire rectangle with melted butter (3 tbl). In a small bowl combine the cinnamon and 3/4 cup brown sugar and sprinkle over the rectangle. Then sprinkle raisins and chopped nuts over the dough (if desired). Roll up the dough into a log (long way) and pinch the seam to seal.
6. Cut the dough into 12 equal pieces (“tie” a knot with thread or dental floss around the log to cut the dough so you don’t squish the rolls); place the pieces in a greased 9x13 inch baking pan. Cover with towel again and let rise in a warm place for 30 min. Then cover with plastic wrap and place in the refrigerator overnight – or just bake them if you are ready to eat them!
7. The next morning take the rolls out of the refrigerator and let stand at room temperature for 30 minutes before baking. (don't want to break your pan if it's glass) Preheat oven to 375 degrees F.
8. Bake the rolls for 25 to 30 minutes or until golden. Meanwhile, mix up frosting and then spread over the rolls when they are done baking and serve warm.

Thank you for your encouragment! I really cannot make these cinnamon rolls too often, or they will go right to my waist! But they are the perfect treat for a special occasion! Blessings!
